Chuck E. Weiss released his first album, The Other Side of Town, in 1981, and was later featured on L.A. Ya Ya, a compilation of performances by blues artists in Los Angeles. He collaborated with Tony Gilkyson, JJ Holiday, and Tom Waits on his second album, "Extremely Cool", which was released in 1999. Weiss also played a minor role in the film "The Brave", which featured his music.

Chuck E. Weiss was famously mentioned in Rickie Lee Jones's hit song "Chuck E.'s In Love" from her 1979 debut album. He was also referenced in several songs by Tom Waits, with whom he had a long-time acquaintance. Weiss's next album, "Old Souls & Wolf Tickets", was released in 2001 and was produced by Gilkyson. He continued to release albums throughout his career, including Red Beans and Chuck E. Weiss in 2014. Chuck E. Weiss was associated with the Los Angeles music scene and played regularly at clubs such as The Central and Canter's Kibitz Room.
